1/2 a Cup coconut oil
1/2 a Cup cacao powder
1/3 a Cup raw honey / pure maple syrup
1 C shredded coconut
2 T goji berries (optional)
In a saucepan over a low heat melt your coconut oil before adding the cacao and honey/maple, stir continuously until a smooth and silky texture has been reached.
Turn off the heat and stir through the coconut and goji berries.
Place mini cupcake cases in a baking tray (silicon or paper cases), spoon the mixture in and then leave to set in the freezer for 1 hour.
This mixture should make around 20 mini chocolates.
Store in the fridge or freezer, enjoy! x
