2 C rolled oats
1 C shredded coconut
1 C pumpkin seeds
1 tsp ground ginger
1 tsp cinnamon
12 medjool dates, pip removed and roughly chopped
1/3 C coconut oil
Desiccated coconut for the topping
In a food processor add the oats, coconut, pumpkin seeds, ginger and cinnamon and pulse to create a flour-like texture (I still like to keep some of my pumpkin seeds and coconut visible, so it's not a completely smooth flour). Pour into a large mixing bowl.
In the food processor add the chopped dates and coconut oil and blitz to make a paste, add to the mixing bowl and with gloved hands mix thoroughly to create a very sticky dough.
Line a baking tin with baking paper and press the dough very, very firmly to make a dense slice, top with the desiccated coconut and again press firmly.
Place in the freezer to set for around 1 hour, remove and slice into bite sized pieces.
